Topsy Turvy Frozen Pressed Dessert Wine
It is a little Topsy Turvy to be making ice wine in the Southern Hemisphere in the height of an Australian summer. There are certainly no snap frosts late in vintage to freeze the fruit in our part of the world like there is in Germany where the practice of making ice wine originated. But we love doing things a little differently at Kellermeister and we have a lot of fun in the process. We hand picked the ripe fruit into baskets, soft froze it in a large chiller and then gently pressed out the luscious concentrated goodness to make this decadent dessert wine. Enjoy!
